Some pie fillings call for something a little more special than the traditional short crust. A "cookie" or Graham cracker crust has a few simple ingredients and is very easy to make. Filling ideas include lemon bars, ice cream pies, and cheesecake.
Ingredients
Nut Free
- 1-1/2 cups finely crushed cookies (such as chocolate or vanilla wafers, gingersnaps or Graham crackers)
- ¼ cup sugar*
- 1/3 cup melted butter
With Nuts
- 1 cup finely crushed cookies
- ½ cup finely crushed nuts of choice
- ¼ cup sugar*
- 1/3 cup melted butter
Instructions
- Pulse cookies or Graham crackers in a food processor on high until coarse crumbs form.
- In a large mixing bowl combine cookie crumbs and sugar*.
- Mix in melted butter. Toss to mix all ingredients well.
- Press mixture into the pie or tart pan so an even layer covers the bottom and partially up the sides of the pan.
Notes
*If using gingersnaps or chocolate wafers or other sweetened cookies, omit the sugar.
If adding nuts, finely crush them and combine with enough “cookie” crumbs to make the basic 1-1/2 cup measurement.
