Ginger-Butter Glazed Rainbow Carrots

Sweet and Savory Carrots coated in a rich crystalized ginger and butter sauce.
Ingredients
- 2-3 lbs of Rainbow Carrots sliced
- 1/4 cup butter
- 1/4 cup crystallized ginger diced
- 2-3 sprigs of thyme
- Salt and White Pepper to taste
Instructions
- Cut carrots at an angle 1/2 inch thick.
- Steam Carrots until they are tender.
- In a large pan, melt butter and add thyme sprigs and ginger. Mix continuously.
- Once sugar on the ginger is dissolved (2-3 minutes), add steamed carrots to pan and coat with butter.
- Cook for another 2-4 minutes on high heat.
- Garnish with thyme sprigs and serve immediately.
