To make your life easier, purchase large mushrooms. They can take more filling (YAY), and because mushrooms shrink during cooking, you lessen the risk of losing your filling to the cookie sheet during the baking process.
Additionally, consider making your filling a day ahead. Doing this will give the ingredients a chance to marry, building even more flavor in the final dish.
