These frozen blueberry & cream popsicles were pure deliciousness as a summertime treat. If you are a blueberries & cream fan, then this popsicle is for you. I made these as a way to break in my new silicon popsicle tray (which I love). Personally, I am a blueberry lover, and I find myself consuming blueberries all year long. However, as desserts go, I usually opt for a warm and bubbly blueberry cobbler, but it’s summertime, and my children wanted something cool to eat after pool time, and truthfully, so did I.
It’s summer! Yet, admittedly I am a year-round oven user. This may be shocking considering I live in a place that stays warm ALL YEAR LONG. But what can I say. I love my oven. I will make exceptions from time to time with the understanding that there will be many opportunities to heat the house. So today I gave my oven a little break!
I love making these blueberries & cream popsicles because they require basic ingredients and still manage to be so rich and flavorful. Thank you, coconut milk! Coconut milk is a staple at my house. Coconut milk has such a diverse flavor profile that it can sit perfectly on the spectrum of sweet and savory dishes. But remember the key to any dish is to balance, especially when the ingredients are so few. To balance the sugar, add a little salt, and to balance the fat, add little acid like lemon juice. A little lemon zest never hurt either, considering blueberries and lemons are famous friends. They get along so well!
This recipe is so easy to make with very few ingredients. You will find with my recipes; I try to make them accessible to most dietary types. Feel free to add the type of milk that best suits your diet.

Reserve 1 cup of blueberries and set aside
Blend the remaining cup of blueberries and all other ingredients together until smooth
Mix in whole blueberries to the blended mixture and pour into popsicle molds
Chill for 4 hours or overnight then enjoy!
