A light and savory broth packed with deep aromatics of lemongrass, ginger, and mushrooms. paired with my Asian Meatballs this soup is a guaranteed hit!
Ingredients
Lemongrass Soup:
1 stalk lemongrass
5 slices of ginger root
1 Lime
4 Tbs fish sauce
1 tsp chili-garlic paste (optional)
6 cups Chicken Stock
1 small head of cabbage thinly sliced
Instructions
Slice lemongrass stalks lengthwise and bruise with a knife to release oils.
In a medium stockpot, add Chicken stock and bring to a low boil.
Add lemongrass stalks and ginger and boil for 3-4 minutes.
Add fish sauce and chili-garlic paste and cook for another 3-4 minutes.
Ladle broth into bowls and add 3-4 meatballs to each bowl.
